Potatoes are a good source of manganese, magnesium, zinc, phosphorus, potassium and vitamins C and B6.They have phytonutrients  which promote health. Phytonutrients  found  in potatoes  are carotenoids, flavonoids and caffeic acid.

Nutrients found in potatoes have the following benefits:

-The high level of carbohydrates in potatoes helps to maintain good levels of glucose in the blood which is necessary for proper functioning of the brain. The high level of carbohydrates also facilitates easy digestion of food.

-The vitamin C in potatoes acts as an antioxidant hence preventing cell damage, heart  complications  and cancer. Vitamin C also helps reduce free radicals which can damage cells and cause illness.

-Vitamin B6 helps create brain chemicals such as serotonin and dopamine hence eating potatoes really helps with depression, stress and attention deficit hyperactivity disorder.

-Carotenoids help maintain proper heart functioning. Potassium helps   lower blood pressure due to its blood vessel widening capability.

-Potassium, magnesium, zinc and phosphorus as well as Vitamin C help to keep the skin smooth.

However, eating potatoes can have negative impacts on somebody’s health. These are:

-Eating potatoes in large quantities on their own can increase the risk of blood sugar imbalances, poor appetite control and diabetes complications. To protect the body from blood sugar imbalances, potatoes should be consumed with the peels or with other whole grain foods.

-When potatoes offset blood sugar levels, they lead to increased hunger between meals which results to overeating and hence weight gain. Fried potatoes and potato chips are also rich in fat and calories. Potatoes are therefore a contributing factor to obesity.

-If potatoes are stored improperly, when prepared and consumed, they can result to inflammation and joint pains. This is the reason why potatoes should always be stored properly.

-Potatoes can trigger gas pain and bloating during digestion something that can make a person very uncomfortable.
